Red ice wine is rare around the world, and is only produced at a few wineries on the Niagara Peninsula. This red ice wine is undeniably exquisite, with its approachable, low bitterness and rich red aroma.
Ice wine is made by extracting only the sweet extract from frozen grapes, so the astringency causes a reaction in order to emphasize sweetness. The coloring of red grapes involves the astringency (tannins) contained in the pigment, which offsets the sweet taste, so the theory is that ice wine is usually made with white.
Therefore, it is very difficult to make red icewine, which is why there are so few red icewines. This red icewine is a masterpiece that can be said to be the ultimate in perfection, as it has a sweetness that is even more sweet than tannins, yet produces the unique aroma of red.
